Whew! It’s gonna be 109 degrees here today, with lots more triple digits ahead this week. Ugh!☀️So I got an early start & fired up the slow cooker, toaster oven & food processor. Huge garden harvest prep for easy, no-oven meals this week. All the fixins, ready to go!☀️In order of appearance: Ina Garten’s roasted eggplant & pepper spread (before cooking); slow cooker apple chutney; my anti-pesto “pesto”; Ina’s spread (finished); and my roasted mixed potatoes (a life hack recipe!).
